Healthy Recipes

A quick alternative to a leafy green salad to round out the meal.
Diet Types: Low Calorie, Vegan, Vegetarian
Ingredients:
  • 1 ripe tomato, sliced
  • 2 Kirby cucumbers, peeled and sliced
  • 1/4 red onion, sliced into thin half moons
  • 1/3 cup Balsamic Vinegar
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons Dijon-style mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • Serves: 4
    Cooking Time: Under 30 minutes
    Instructions:
    Place all vegetables in a serving bowl. Mix the dressing ingredients together and drizzle over salad. Serve immediately. This salad can be refrigerated for up to 2 hours before serving.
